21 Feb Pineapple and Passion fruit Jelly
Don’t feel like pudding this Christmas? Try this vegan jelly instead.
170g can passion fruit pulp
300ml pineapple juice
1/3 cup sugar (I used evaporated cane sugar)
3 teaspoons agar (vegan setting agent from Asian grocer)
I mango, diced
5-6 fresh passion fruit
1. Place canned passion fruit, pineapple juice, water, sugar and agar into a saucepan. Stir or whisk as you bring the liquid to a boil
2. Remove the liquid from the heat at the boiling point. Pour mixture into 5-6 glasses or bowls (depends on size)
The agar will set the liquid at room temperature within an hour* Then transfer to the fridge to chill. Can cover with cling film.
3. Serve, top with mango, and fresh passion fruit
* if the liquid doesn’t set it’s due to the enzymes in the pineapple. Return the liquid to the saucepan. Add a little more agar and repeat the process.
Passion fruit is a beneficial fruit with a healthful nutrition profile. It contains high levels of vitamin A, which is important for skin, vision, and the immune system, and vitamin C, which is an important antioxidant.
