Chilli & Lime Prawns (Shrimp)

1kg green prawns (shrimp), peeled with tail intact, deveined
4 cloves of garlic (or to taste)
1 long green chilli, finely chopped
Zest of 1 lime
¼ cup (60ml) extra-virgin olive oil
Fresh lime wedges to serve
Chipotle Mayonnaise
1 cup low-fat mayonnaise
1 clove garlic (or use aioli instead of mayonnaise)
2 tbsp chipotle chilli sauce
Squeeze of lime juice to taste
Serves: 4
Chipotle Mayonnaise – Mix all ingredients together in a bowl. Taste and adjust seasoning. Refrigerate until ready to use.
Prawns – Mix all the ingredients together in a glass dish and allow to marinade for 10-15 minutes.
Grill the prawns on a grill, BBQ, or fry pan 1-2 minutes each side until cooked through. Serve with chipotle mayonnaise and lime wedges.
I often divide this recipe by 4 and make dinner for 1.
